CRANBERRY- OAT MUFFINS
Ingredients:
6 Eggs
1 tsp Baking Powder
1 tsp Baking Soda
1 1/2 cups Agave syrup (we used honey and maple syrup)
1 1/2 tsp Vanilla Extract
2 tsp ground Ginger |
1 tsp salt (which can be omitted)
4 cups rolled oats
1 cup spelt flour (or normal)
1 1/4 cups canola oil
2 cups fresh or frozen Cranberries |
Directions:

Combine eggs, baking powder & Baking soda. Add Agave syrup, vanilla extract, ginger and salt. |

Blend oats into wet ingredients. Let sit for 5 minutes or until oats soften. Stir in flour and oil. Add cranberries. Set Aside. |

Line two and half 12 cup muffin pans with liners. Preheat oven to 350 F. Fill muffin pans three-quarters full. Bake 15-20 minutes. |

CLASSIC CRANBERRY NUT BREAD
Ingredients:
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda |
3/4 cup orange juice
1 tablespoon grated orange peel
2 tablespoons shortening
1 egg, well beaten
1 1/2 cups Ocean Spray® Fresh or Frozen Cranberries, coarsely chopped
1/2 cup chopped nuts |
Directions:

Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan. |

Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread evenly in loaf pan. |

Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf (16 slices). |

I’d share the recipe but I’m not sure if it’s a family secret or not. The basics, 1lb cranberries (cut in half), Sugar, water, Almond extract.
