Allison’s Cheesecake
Kelly’s (flickr ) rasberry Jell-O soaked pears with cool whip
My No-Bake Cheesecake:
INGREDIENTS:
1 (1/4 ounce) envelope unflavored gelatin
1/2 cup sugar **SUBSTITUTE with granular Splenda
1 cup boiling water
2 (8 ounce) packages cream cheese, softened
1 teaspoon vanilla
6 ounces graham cracker pie crusts — Instead of this check out this crust. It’s a Chocolate-Almond Cheesecake Crust and LOW CARB!
DIRECTIONS:
1. Mix gelatin and sugar. Add boiling water and stir until gelatin mix is dissolved.
2. Beat cream cheese and vanilla with mixer until creamy.
3. Gradually add gelatin mixture, beating until well blended after each addition.
4. Pour into pie crust. Refrigerate 3 hours or until firm.
Kelly’s Blushing Pears
Total preparation time: 15 minutes
Serves: 4
INGREDIENTS:
4 Bartlett or D’Anjou Pears
2 box Jello Brand Raspberry Flavor Gelatin
4 cups Water
DIRECTIONS:
1. Mix Jello Raspberry Flavor Gelatin and 4 cups water in a large saucepan. Bring to a boil on medium-high heat, stirring frequently until gelatin is completely dissolved.
2. Add 4 firm peeled pears; partially cover saucepan with lid. Reduce heat to medium-low; simmer 20 minutes or just until pears are tender. Stir gently every 10 minutes. Remove pears from liquid and discard liquid.
3. Serve pears warm or cover and refrigerate at least 1 hour to overnight. Top each pear with 2 Tbsp Whipping Cream if desired.
