Tonight I went to Gilda’s Club to help bake snacks for their members. One of the 4 treats we made were Legal Cookies.

Ingredients:
|
1 cup organic raw almonds (Whole or slivered)
1 cup rolled oats
1 cup organic, unbleached All-purpose or spelt flour
¼ teaspoon ground cinnamon
¼ teaspoon grated fresh ginger, or 1/8 teaspoon powdered ginger
1/8 teaspoon ground cardamom

1/8 teaspoon of freshly grated nutmeg
¼ teaspoon of seasalt
½ cup safflower oil
½ cup maple syrup
¼ Tablespoon vanilla extract
Jam, for filling

Directions:
| 1. | Preheat the oven to 350′F. Line a baking sheet with parchment paper. |
| 2. | In a food processor fitted with a metal blade, grind the almonds into a coarse flour, about 2 minutes. Add the oats, flour, cinnamon, ginger, cardamom, nutmeg, and salt and process for another minute. |
| 3. | Add the oil, Maple syrup and vanilla extract. Continue to process until well combined. The dough will quickly form into a ball. Wrap the dough in plastic wrap and let rest at room temperature for 15 minutes. |
| 4. | Form 1 tablespoon of dough into ball, place on the prepared baking sheet and make a thumb imprint in the center of each cookie. Fill you’re your favorite organic jam or other filling. Place the cookies on the baking sheet about l inch apart. |
| 5. | Bake for about 15 minutes; the cookies are done when the bottoms are browned. |
